Its seeds are edible, rich, and versatile: once cooked, they yield a sweet kernel that has been used for generations in local cuisine.<br \/>Naturally nutritious, Orejero seeds contain 20\u201330% protein, making them a valuable food source for human consumption. They can be toasted, added to salads, or incorporated into a variety of recipes.  <\/p>\n<p>Promoting their responsible use helps preserve a local resource, strengthens traditional practices, and supports the sustainable management of ecosystems.<\/p>\n<p>The seeds are the basis of the traditional dulce de orejero, a handcrafted preparation especially popular during Holy Week, with a delicate taste reminiscent of a sweet paste between a dried fruit and a legume.
