The Orejero tree is an iconic species of the Colombian Caribbean, growing abundantly in the tropical dry forest. Its seeds are edible, rich, and versatile: once cooked, they yield a sweet kernel that has been used for generations in local cuisine.
Naturally nutritious, Orejero seeds contain 20–30% protein, making them a valuable food source for human consumption. They can be toasted, added to salads, or incorporated into a variety of recipes.

The seeds are the basis of the traditional dulce de orejero, a handcrafted preparation especially popular during Holy Week, with a delicate taste reminiscent of a sweet paste between a dried fruit and a legume.
