The Maya Nut tree, also called Guáimaro (Brosimum alicastrum), produces abundant edible seeds with two harvest seasons. While it is one of the most emblematic foods of Central American cultures, considerable efforts are being made in Colombia to preserve ancestral knowledge around the preparation of its seeds and to reintroduce its consumption into local diets.
